Breaking News!! I’m going vegan! Yes, this cheese loving, Nandos addict is attempting the big change. Now, everyone who knows me have said that I won’t last longer than a day. Please guys, have a little faith in me. But to be honest, I do understand where they’re coming from. I do love food, all food, of any kind. But I am actually going to try this and see how I get on. Today is day two of vegan life and I’m feeling very positive about it.
So for anyone who may not know already, following a vegan diet means you don’t eat any dairy, meat, fish or anything containing animal products. It’s good for the environment, animals and your own health. I think at this stage it’s easy for me to say that I will succeed and stick with this forever but I know that more than likely after a few days I will start to struggle. No matter what new diet/healthy lifestyle you’re trying out, you always struggle a few days into it. I’ve made sure that I’ve done a full weekly food shop so everything in the fridge is suitable for me to eat and I won’t have to decide on the spot what I’m going to have. I know vegans get a lot of bad press, I don’t mind the ones who eat their tofu and move on. However, it does annoy me when people feel the need to push their opinions on others. So this is definitely not what I’m doing and I will not be trying to make anyone else turn vegan.
From looking online over the past couple of weeks I’ve read about all of the benefits that a vegan diet has on your health so why not try it out? Who wouldn’t want to have amazing skin, strong hair, potentially loose weight, lower risk of certain health conditions and of course save the cute little animals and the environment.
My initial thoughts on this is that I will struggle to think of meals to cook. I always cook everything from scratch anyway, so in that sense I will know exactly what I’m putting into my food. However, I normally always base my meals around either the meat or the fish, I do tend to eat more fish than meat but now it will be the planning of the meals without it. I think when you’re in the habit of cooking the same few meals each week it’s hard to change it up. But I don’t have a choice now, I’m going to have to be more imaginative and stop being so boring and eating the same foods week after week.
I’ve been on an Instagram following spree this weekend, finding every vegan account that I could. I need this inspiration from others who are creating amazing meals. I thought that yesterday would be very difficult and that I would be starving all day long. Which to be honest, that is the norm for me, I’m, literally always hungry. But I was surprisingly full from the meals I ate. I filled up on kidney beans and chick peas and every veg you can think of and did not miss meat or fish. Luckily I do actually like most vegetables so I can vary what I’m eating and eat a lot of them. I think if you’re a fussy eater you would find it difficult to put healthy vegan meals together.
I’ll be posting about my ‘vegan journey’ here and updating on how I get on. Hopefully I won’t be writing a post next week saying that I’ve caved and ate a chicken, but at this point I don’t see that happening.
What tips or recipes do you have that would help me along the way? X
